Classic Chicken, Traditional Tuna and Excellent Egg Salad

Everyone needs a fast, easy go-to salad recipe and this is it!  A tasty take on Classic Chicken Salad, this recipe is perfect for a quick luncheon or a super simple supper and is always thoroughly appreciated by all; with or without including the optional ingredients.  Additionally, this recipe also produces an Excellent Egg Salad and an outstanding Traditional Tuna Salad and is sure to be a crowd pleaser and solid staple in your rotation.  Classic Chicken Salad Sandwich

Ingredients-

  • 2- 12.5 oz. canned Chicken Breast or 2 cups cooked Chicken Breast
  • 1/2 large Onion
  • 3 ribs Celery
  • 2 large Carrots
  • 3/4 cup Mayonnaise or Greek Yogurt
  • 1/8 cup Mustard
  • 1/3 cup Pickle Relish -optional-
  • 1 tablespoon Lemon Juice
  • 1 dash Pepper
  • 1 tablespoon Parsley
  • 1 teaspoon Dill Weed
  • 1/2 teaspoon Garlic Powder
  • 2 hard-boiled Eggs (chopped) –optional-
  • Bread, Pita, Wrap, Croissant or Rolls of choice
  • Lettuce, Spinach, Kale, Arugula or any other Greens
  • Tomatoes
  • Cooked Bacon -optional-
  • Cheese selection -optional-

Traditional Chicken Salad

Directions-

Chop onion, celery and carrots and place in a mixing bowl.  Add drained shredded or chopped chicken, mayonnaise or Greek yogurt, mustard, pickle relish (if using), lemon juice, pepper, parsley, dill and garlic powder, then mix well to combine. If using the optional chopped hard-boiled eggs, add and mix thoroughly. Refrigerate for a couple of hours to chill the chicken salad. 

Serve on bread, pita, wrap, croissant or roll of choice with lettuce, spinach, kale, arugula, or any greens of choice and sliced tomatoes.  If desired, top with cooked bacon and cheese selection.

Leftovers can be easily stored by refrigerating  in an air tight container for up to three days.

Primo Pizzelles!

Pizzelles with Nutella & Powdered SugarA staple at each & every Italian holiday, Pizzelles are a tasty treat that are easily made all year round!. The classic cookie recipe traditionally has the delicious taste of Anise, however, these crispy, delicate delights can be flavored with Vanilla, Chocolate, Almond, Cinnamon, & Orange, Lemon, Lime or almost any other flavor you fancy.  Pizzelles can be made into a cone or tube shape while warm for cannoli’s, ice cream, etc.  I prefer my Pizzelles with a layer of Nutella  in between them, as featured in these photos, however, they are divinely delectable sandwiched, filled, topped or plain and simple.

Please note:  A Pizzelle Press or Iron is required to make these tasty treats.  The press/iron is available in stovetop & electric versions and  both work equally well. 

Depending on the size of your Pizzelle press/iron, this recipe yields approximately 30-40 Pizzelles.

Ingredients

  • 3 eggs
  • 2/3 cup sugar (or 2/3 cup brown sugar)
  • 1/4 cup butter, melted
  • 1/4 cup vegetable oil
  • 1 1/2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • 1 pinch salt
  • 1/2 teaspoon vanilla
  • 1 1/2 tablespoons anise seeds
  • 1 tablespoon Anise oil
  • Nonstick Cooking Spray
    • Powdered Sugar (For Sprinkling)

Optional: remove anise oil & anise seeds & add:

  • 1/8 cup unsweetened cocoa powder, & 1 additional tablespoon vegetable oil
  • 1 1/2 teaspoons of cinnamon
  • 2 teaspoons of vanilla
  • 1/8 cup Amaretto, Frangelico, Sambuca or any liqueur & an additional 1/8 cup all-purpose flour
  • Rind of ½ an orange, lemon or lime & 2 teaspoons of orange, lemon or lime extract
  • Salt for sprinkling

Directions

In a large bowl, combine the eggs, sugar, butter & vegetable oil & mix until well combined. Add the flour, baking powder, salt, anise seeds, anise oil or optional ingredients if desired, & mix well to form a homogenous batter.  Set aside at room temperature for 30 minutes, the batter should be loose.

Heat the pizzelle iron until very hot & spritz with a nonstick cooking spray.  Pour 1 heaping teaspoon to 1 tablespoon of batter onto the press/iron (depending on size), close it, & return to the heat. Cook until golden brown, about 45 seconds to 1 ½ minutes. Repeat, (ensuring iron/press is hot for each batch) until all the batter is used, or batter can be stored in the refrigerator for up to 3 days.  Allow Pizzelles to cool on a paper towel or wire baking rack.  Sprinkle with powdered sugar & enjoy!

Leftover Pizzelle are easily stored in air tight containers, for up to a week, separated with layers of wax or parchment paper or they may be frozen for up to 3 months.

Naturally Clean with 50+ Uses of Borax

Borax BoxBorax is a naturally occurring mineral also known as sodium tetraborate. It doesn’t cause cancer, accumulate in the body, or absorb through skin.  It is a naturally occurring substance and is not harmful to the environment.  Borax contains no phosphates, peroxide, chlorine, or other chemical additives.

Borax has been a household name for over 123 years.  Below are over 50 Household ‘recipes’ for uses of this multi-tasking, multi-purpose cleaning product. 

  • Weeds- Sprinkle in cracks of cement, pavers, stone, blacktop, etc (not for use in gardens)
  • Ant, Roach & Water Bugs– Sprinkle equal parts borax and powdered sugar where bugs are (keep out of reach of children and pets)
  • Insecticide- Sprinkle around the perimeter of your home to keep insects away
  • Mice Repellent- Sprinkle on  floors near the walls to deter mice
  • Bed Bugs- Sprinkle on mattress, allow to penetrate for 1 to 1.5 hours, vacuum
  • Dust Mites- Sprinkle on affected area, allow to penetrate for 2-3 hours, vacuum
  • Fleas- Sprinkle onto carpets, allow to sit for 1 to 1.5 hours, vacuum
  • Litter Box- Blend a few tablespoons into the cat litter
  • Urine, Feces & Vomit- Blot then rub area well with borax on a damp cloth, allow to dry, vacuum
  • Mold & Mildew- Mix borax and white vinegar to make a thick paste, smear onto moldy area, let dry overnight, wipe, rinse
  • Rust- Mix ½ cup borax, ½ cup water and 1 tablespoon of lemon juice, apply with a cloth, rinse
  • Musty Odors- Mix 1 cup borax, 1 cup water and a splash of lemon juice.  Allow to soak a few hours, then launder
  • Goo- Mix 2 parts Borax with 1 part water, scrub to remove sticky, gooey or gummy adhesive or residue
  • Laundry- Add 1 cup borax to every load of laundry to boost cleaning power
  • Laundry Pre-Soak- Soak laundry in 1/2 cup of borax and a splash of white vinegar for 1 hour prior to washing
  • Delicates- Soak delicates in 1/3 cup borax and 2 tablespoons mild laundry detergent, rinse
  • Stains- Mix borax and water to make a thick paste, work into the stain, allow to sit for 1 – 3 hours, rinse
  • Odor Neutralizer- Dampen spot, blot or rub equal parts borax and baking soda into stain, allow to dry, vacuum
  • Carpet Stains- Wipe stain, then mix borax with water to make a paste, blot into carpet, allow to sit till dry, vacuum
  • Carpet Cleaner- Mix ½ cup borax and 1 gallon water into carpet machine
  • Outdoor Furniture- Mix 1 tablespoon borax, 1 teaspoon dishwashing detergent and 1 quart hot water, clean, rinse
  • Indoor Furniture- Mix 1 tablespoon borax, 1 tablespoon white vinegar and 1 cup water, clean, allow to dry and vacuum
  • Floors Mix 1/3 cup, 1 gallon water, a squirt of dishwashing detergent and a splash of white vinegar
  • Tile & Grout- Mix borax with white vinegar to create a thick paste and scrub with a brush, rinse
  • Toilet Cleaner- Sprinkle 1 ¼ cup into toilet before bed.  The next morning, clean bowl easily as grime and buildup will be loose
  • Daily Shower- Mix 1/4 cup borax, 1/4 cup hydrogen peroxide, 1/4 cup white vinegar and 1 1/4 cup water, spray down shower after use
  • Windows- Mix 2/3 cup borax, ¼ gallon white vinegar and ¾ gallon water
  • All Purpose- Mix 3 tablespoons of borax, 1 cup of hot water and 1 cup of white vinegar
  • Powdered- Sprinkle on damp cloth or sponge and use (will not scratch anything including fiberglass)
  • Non-Abrasive Bathroom- Mix ¾ cup borax, ¼ cup white vinegar and 1 gallon water
  • Stainless Steel & Porcelain- Mix 1 cup borax, ¼ cup lemon juice and 1 quart water
  • Degreaser- Mix equal parts borax and dishwashing detergent and scrub, rinse
  • Spilled Food/Drinks- Mix a solution of 1 tablespoon borax, 1 quart water and a splash of lemon juice, rinse
  • Unclog Drains- Place ½ cup Borax into drain, follow with 2 cups boiling water, allow to sit for 30 minutes then run water to flush  (This is septic safe)
  • Humidifier or Dehumidifier- Mix 1 tablespoon borax with water into the unit and let sit for 2 hours, rinse
  • DIshwasher- Mix 1/3 cup borax and ¼ cup baking soda into empty dishwasher and run using the hottest water setting
  • Oven- Make a paste of equal parts borax, white vinegar and baking soda.  Apply with brush and leave on for a few hours, then wipe
  • Grill- Make a paste of equal parts borax and water, add a splash of white vinegar.  Apply with brush, then wipe
  • Cutting/Chopping Boards & Butcher Blocks- Mix equal parts borax, baking soda, lemon juice, clean and rinse
  • Refrigerator- Mix 1 tablespoon borax, 1 cup water, 1 cup white vinegar
  • Automatic Dishwasher Detergent- Mix equal parts borax and baking soda
  • Skillets, Pots & Pans- Mix borax with water to create a paste without damaging or scratching fragile surfaces
  • China- Soak china in a basin of warm water, ½ cup borax and a splash of lemon juice for up to 3 hours, rinse
  • Metal Coffee & Teapots- Fill pot with water and 1 ½ teaspoons of borax.  Boil water, let mixture cool, rinse
  • Reduce Water Spots on Glasses/Dishes- Add 1 tablespoon borax to dishwasher with regular detergent
  • Garbage Disposal- Pour 3 tablespoons borax into disposal allow to sit for 1 to 2 hours then flush with warm water
  • Deodorize Garbage Pails- Fill pail with ½ cup borax and water, allow to soak for 20-30 minutes, rinse and dry.  Sprinkle borax into the bottom of the pail to keep bugs away, absorb moisture and odor
  • Fireplace- Mix 1 cup borax, 1 cup water and ¼ cup white vinegar
  • Baseboards, Countertops & Walls- Mix 3/4 cup borax, 1/2 cup white vinegar and 1 gallon water
  • Hair, Makeup Brushes & Combs- Mix ¼ cup borax, 1 tablespoon of dishwashing detergent and a splash of white vinegar into a basin of warm water.   Swish brushes and combs into the water then allow to soak for up to 2 hours.  Rinse and air dry
  • Car Wash- Mix 1/8 cup borax and 1.25 gallons of warm water
  • Hand Cleaner- Add borax to your damp hands, scrub together then rinse
  • Preserving Flowers- Method 1 and Method 2

Spectacular White Sangria

White Sangria in Large JarsThis delicious white peach, citrusy sangria is simple to make and perfect for a picnic, backyard barbeque, party or anytime.  This recipe yields about 2 quarts.

  • 2 medium size ripe peaches
  • 1 medium size orange
  • ½ medium size lemon
  • ½ medium size lime
  • 1-1 ¼ cup seedless white grapes
  • ¾ cup peach schnapps
  • ½ cup triple sec
  • Splash of lemon juice
  • Splash of lime juice
  • 1.5 liter bottle of white wine of choice, to fill

Wash, slice or chop the peaches, orange, lemon, lime and grapes and add to a 2 quart glass pitcher, mason jar or punch bowl.  Add the peach schnapps, triple sec, lemon and lime juices. Fill the remainder of the pitcher, jar or bowl with white wine and stir.  Cover and refrigerate for a minimum of 8 hours, serve and enjoy!

Fast “Fiesta” Bean Burritos

These easy to make, filling Bean Burritos are a wonderful quick meal and require minimal clean-up too!  As always, I recommend purchasing the highest quality (low sodium and organic, if possible) ingredients you can find.  This recipe yields approximately six medium size burritos.

Rice and Bean Burrito Filling

  • 1 teaspoon of extra virgin olive oil
  • 1 Bay Leaf
  • 1 cup of mixed peppers and onions
  • 1 jar of salsa
  • 1 package of steam-in-bag rice, cooked to package directions, or about 2.5 cups cooked rice
  • 1 can of Black or Red Kidney Beans
  • 1 package of medium size tortillas (room temperature or warm)
  • Condiments of your choice- shredded cheese, sour cream, lettuce, tomato, onion, guacamole, pico de gallo, corn, olives, hot sauce, etc.

Heat the olive oil and bay leaf in medium pot on the stovetop and add the peppers and onions to sauté.  When the peppers and onions are cooked through, add the salsa and rice and then mix well. Lower the temperature on the stove; rinse and drain the beans and add them to the mixture and stir well.  Cover and continue to cook on low for 5 to 10 minutes, stirring frequently. Remove the bay leaf, place about 1/4 to 1/3 of a cup of the mixture onto a tortilla; then add your desired condiments, fold and enjoy!

Now, what about those leftovers?? Breeze through breakfast by reheating (without overheating) the mixture, either by stovetop or microwave.  Next, plate the mixture, add your desired condiments, top with an egg prepared your favorite way and garnish with cilantro or parsley.  Serve with a warm tortilla and enjoy!
